Brinjals, also known as eggplants or aubergines, is a spongy and absorbent
vegetable that is used in several cuisines. Though it is majorly considered as a
vegetable, eggplants are fruits that grow in flowering plants and contain seeds.
Eggplants become tender when cooked and can have a great taste as it can
easily absorb the oils, spices and sauces added to it. Eggplants can be made
into pickles, cooked in oil, incorporated in curries, sauteed with salts or even
barbecued. Eggplants are used in several cuisines but are dominant in Asian cuisines.
